These gummies are packed full of gelatin to promote healing. One of the biggest challenges that people who go through surgery experience is a loss of appetite after the surgery. Not eating slows recovery because the body needs protein to facilitate the repair and formation of tissues. (See my previous posts on my surgery and recovery for references.) These gummies helped me bridge that gap between surgery and the return of my appetite. I was able to snack on one or two of these periodically until I felt able to eat a larger meal.
I deliberately chose frozen fruit for these gummies as I wanted cheaper ingredients that were easy to keep on hand. The gelatin can be found online. I get mine on Amazon. Look for brands that say the gelatin comes from grass-fed beef.
Ingredients
2 cups frozen fruit
2 tablespoons lemon juice
2 tablespoons gelatin
Directions
Heat the fruit over medium heat until soft and almost pureed. Add the lemon juice and continue to cook a few minutes more. Strain the mixture through a sieve to remove the seeds.
Clean the saucepan to remove remaining seeds in the pan. Return the fruit mixture to the pan and the gelatin. Continue to cook and stir until the gelatin is completely dissolved.
Pour the mix into candy molds. Chill in the refrigerator or freezer until firm. Remove from molds and store in an air tight container in the refrigerator or freezer.
