Pumpkin-Spiced Pecans
When I first tried to make these pecans, I burnt them. Trust me, you don’t want to burn the pecans. I was trying to get them done fast so I cranked up the heat. My impatience got the best of me. Then I turned the heat down and watched them a bit more closely. Boom. Perfection.
Lesson: Keep the heat low and don’t get side-tracked playing Solitaire or watching the latest season of whatever on Netflix.
Ingredients
2 cups pecans
2 1/2 teaspoons pumpkin spice mix
1/2 teaspoon salt
3 teaspoons melted coconut oil, enough to coat the nuts
Directions
Preheat the oven to 325 degrees.
In a medium mixing bowl, mix together the pecans, melted coconut oil, spice mix, and salt. Mix thoroughly so that all the nuts are covered in oil and spices.
Spread on a parchment-lined baking sheet.
Bake for about 7-10 minutes. Stir the nuts halfway through. Watch them closely near the end or they will burn.
Allow the nuts to cool completely and store in an airtight container.
