Chocolate Walnut Brownie Smoothie
I accidentally stumbled upon this smoothie when I was recovering from my first eye surgery, and it is the bomb diggity. It seriously tasted like a salty chocolate walnut brownie. My next eye surgery is coming up, and this time I’m making sure I have extra packets of this walnut butter on hand to make this smoothie.
The biggest challenge I seem to have after any type of surgery is that I lose my appetite. I think a lot of people experience this. The problem is that your body needs protein to build and repair tissues after surgery. I was prepared for it this time. I made sure I had smoothie ingredients on hand, along with other easy protein fixes. I included both gelatin and collagen into both my pre- and post-surgical plan. I tell you to chill the can of coconut milk below, but I didn’t have the patience after surgery. I wanted to get something in my belly and get back to bed so I just poured out the milk and tried to leave most of the watery part in the can. It’s a smoothie, not an exact science.
Hydration is good after surgery so I didn’t make a big deal of it.
One recommendation I have is to taste the smoothie before adding the Swerve or other sweetener you decide to use. You can always stir that in at the end, if you like, or give it another whirl in the blender.
Makes 2 smoothies, or 1 really big one if you are me
Ingredients
1 can of coconut milk, chilled
1 packet of Artisana Walnut Butter, about 1 ounce
1 tablespoon coconut butter
2 tablespoons of collagen powder
½ teaspoon vanilla extract
1 tablespoon cacao powder
Pinch of salt
1-2 cups of ice cubes
1 teaspoon of Swerve, or to taste - omit for 21DSD
Directions
Scoop the cream of the coconut milk out of the can and discard the water. Add all ingredients, except the sweetener, to a blender and blend until smooth. Taste and add sweetener to your liking. Start with a few cubes of ice and add more until it is the consistency you like.
