Minty Shake


Don’t forget to wear green today or you might get pinched! It’s St. Patty’s Day. Festivities have started early in my neck of the woods so I thought I would get this Minty Shake out there so you could have something green, indulgent and yet safe to drink. Use a chunk of your favorite green chocolate bar for the chocolate shavings.

Ingredients

1 14-ounce can of coconut cream*

½ an avocado

1 cup loosely packed mint leaves

2 cups ice, divided

1 tablespoon Swerve

1 tablespoon collagen powder, optional

1 teaspoon vanilla extract

Chocolate shavings for garnish

Mint leaves for garnish

Directions

Place the coconut cream, avocado, mint leaves, 1 cup of ice, Swerve, collagen powder, and vanilla extract in a blender. Blend until smooth, scraping down repeatedly until the mint has been fully blended into the mix. Add remaining ice and blend until smooth.

Pour into glasses and garnish with chocolate shavings and mint leaves.

*If you can’t find coconut cream, place a regular can of coconut milk in the refrigerator for at least two hours. Scoop out the cream from the can of coconut milk. You may need additional coconut milk to reach the consistency you like.
