Zesty Italian Salad Dressing

When I was a teenager, I worked at a grocery store. I was bewildered by the wide variety of salad dressings in the condiment aisle one day while cleaning up a spill. There are even more choices now, most laden with chemicals and sugar. Back then, I had a thing for Italian dressing, specifically zesty Italian dressing. The zestier the better. I remember pouring over the different brands and trying to decide which one would be my favorite.

This recipe hits all the right notes of my favorite zesty Italian dressing, without all the chemicals and unnecessary sugar. It’s got that zing, and it is definitely yumtastic!

Ingredients

1 cup of olive oil

1/3 cup red wine vinegar

3 tablespoons prepared gluten-free mustard

1 tablespoon Italian seasoning

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon celery salt

½ teaspoon black pepper

½ teaspoon coarse sea salt

Directions

Whisk all ingredients in a mixing bowl until well combined. Keep refrigerated in a water tight container. Good for about a week.

The seasonings will settle in the jar or container you use. Use a water tight container and just shake it up before using. Or simply give it another stir with a whisk or a fork to combine the ingredients before using.
