Easy Eggs in Purgatory

I like to keep things easy. Simple. That’s how I roll. Early Sunday morning I was noodling about trying to figure out what I would have for breakfast when I realized it was almost lunchtime. I peeked in the fridge and realized I had half a jar of salsa, a couple of jalapenos and some eggs.

Boom! Eggs in purgatory. I’m sure there are other recipes out there that are much more complicated and just as tasty, but I love how easy this went together and how quickly the whole thing was done. So I had to share. You're welcome.

Ingredients

4 eggs

1 jalapeno, sliced, to taste

4 green onions, sliced, green tips reserved for garnish

½ cup salsa

¼ cup water

2 tablespoons olive oil

Salt & pepper

Cilantro, chopped, for garnish

Directions

Heat a saute pan over medium heat. Add the olive oil, green onions and jalapeno. Lightly salt and pepper the green onions and jalapeno. Allow to saute for 3 minutes until slightly softened.

Add the salsa and water to the pan. Stir until combined. Bring it to a simmer.

Crack an egg into a small bowl and gently turn it into the simmering salsa. Continue until all eggs are in the pan. Salt and pepper the eggs.

Cover the pan and simmer for 5 or so minutes until the eggs are as firm as you like them.

Garnish with the green tips of the green onions and the chopped cilantro.
