Chorizo and Eggs
Sunday was supposed to be a much more productive day. It didn’t quite turn out that way. I have a very old freezer that was gifted to me by an awesome aunt and uncle who found it when they moved into their new home many years ago. They were planning to sell it at a yard sale when I stopped by to see how the sale was going and mentioned I was on my way to price freezers. My uncle gifted it to me, and it’s still going strong more than 15 years later.
It’s old, though, so it’s not frost free. Every few months I need to take everything out of the freezer and defrost the thing to keep the frost from getting too built up and pushing the door out. I was hoping to get to it before I left on my business trip last month, but that didn’t happen.
When I got downstairs Sunday morning, I realized the door was pushed open a bit. Frost was covering everything in the freezer. It was a mess. Several items on the door of the freezer had defrosted but were luckily salvageable.
By the time I got all the big chunks of frost broken up (with a hammer!), the freezer defrosted, everything cleaned up, sorted, and put back in the freezer, it was lunch time and I was exhausted. I ended up doing some reading and watching Hawaii Five-0 reruns on Netflix for much of the rest of the day.
Last night, I decided to whip up something with the chorizo that needed to be used up. I believe I first saw this on The Spunky Coconut, but I am not entirely sure.
All I did here was saute up some onion, bell pepper, and spinach. Add chorizo. Let that cook a bit, top with eggs and place in a hot oven, about 400F, for about 10-15 minutes until the eggs were done.
That’s it. It’s that easy. And breakfast for the rest of the week is done. Boom.
