A Nap for My Kingdom....

I'm so tired today, and a little cranky. I snapped at my daughter when she was making a dessert this evening. I've had this window up for hours trying to figure out what to type... and I fell asleep on the couch. I feel like I could go to sleep and not wake up for 12 hours or something.

This should pass. In a day or so, I should have more energy, which is good because I have meal planning to do for next week, groceries to buy, chores to do. In the meantime, I will take good care of myself and get some decent sleep.

I was determined to find something other than chicken cacciatore for lunch today. I dug around in my freezer and found a packet of Nom Nom Paleo's Kalua Pig that I had stashed away as emergency protein. It's the best pork roast that I've come across and is simply so versatile. You can make the meat into almost anything - eat it alone, as tacos, whatever.

Breakfast ended up being a little bit of everything on my plate. I had a little bit of spaghetti squash from the other night and a smidgen of the fennel and onions from last night. I added some Bavarian style kraut I made a few weeks back and some of the pork roast. Voila! Breakfast! Easy peasy! Breakfast does not have to be breakfast-y type foods. Breakfast is whatever you happen to have on your plate the first meal of your day. The idea of sugary breakfast foods is a marketing gimmick dreamed up by food manufacturers to convince you that you need their carbage to start your day off right. You don't. In fact, we've been starting our day off with their carbage for decades, it has only led us down the path of nonhealth - being overweight, struggling with high blood pressure or high cholesterol, and a general feeling of unawesomeness. You deserve to feel awesome. We all do. Hence, why I am doing this sugar detox. Bring on the awesome!

Lunch was more pork roast and some leftover roasted butternut squash. I went down to the cafeteria at lunch and grabbed a small bowl of veggies to supplement. Tip: Make your resources work for you. Figure out what you can order either in your cafeteria or in restaurants near you. This way you are prepared if you need to run out for lunch one day or make a last minute change or supplement your meal.

Dinner was going to be a night out with a friend I hadn't seen in awhile, but things have been crazy at work for us both so we postponed for awhile. I found some leftover hot Italian sausage in the fridge and topped it with marinara sauce.

I promptly konked out shortly after dinner. I must have needed the nap, but I had such good plans for being productive tonight! Tomorrow is another day, I guess.
