I'm not going to lie. I'm getting a little sick of my leftovers. It's not practical for me to make smaller meals more often, though. My schedule can get a little hectic with work, and I've found over the last year or so that it works best if I make one or two larger meals throughout the week and supplement with smaller ones as needed for variety.
Tonight I needed some variety. I decided that I had some red cabbage that needed using and some tuna. I also decided to give homemade mayo a whirl for the first time every. It was almost a disaster, but thanks to the magic of the interwebs, I was able to find a solution that worked beautifully.
My breakfast was the usual, two eggs, spinach sauteed with bacon, a little extra bacon, sauerkraut, and the carrots I had leftover from yesterday morning. I had my usual mug of broth to wash it all down.
Lunch is not showing because I ate it before I remembered to take a picture. It's the chicken cacciatore from Monday night. I'm having it for lunch tomorrow, too. I'll admit it's getting old, but having meals already prepped and ready to pop in my lunch bag saves me so much time and headache that I will deal.
I wanted something different for dinner. I decided on tuna cakes. I love Nom Nom Paleo's recipe, but sweet potatoes are on the limit list for the detox plus I didn't have any cilantro. It's like -8 degrees outside so I'm not stupid enough to go to the grocery store for one ingredient. I'll have to make do with what I have. It's an adventure!
I decided to roast some butternut squash with some spanish seasoning mix I've been developing, mash that, and use it in place of the sweet potatoes. It wasn't bad. This might be worth tweaking for a blog recipe in the next week or two.
A few days into the detox we start to get edgey and crabby. The carb flu sets in, and it can be very tempting to go off track just that little bit to take the edge off. Stay on track! Remind yourself of why you decided to do this in the first place. Do not lose sight of your long-term goals for some short-term pleasure.
