Starting 2015 Off Right

It’s been awhile since I’ve posted. I had a lot going on in November and December 2014. Between the holidays and an exam at work, I was a bit overwhelmed. I’m just now crawling out of the messes I’ve made between all of the holidaying and the stuff that was set aside so I could study. Gradually, things are returning to normal. Even the Christmas tree came down less than a month after the holiday. I’m doing good!

Normal, though, this time of year equates to super stressful, which can lead to bad things in the food department. And I’ve been super naughty over the holidays. Between the sugar and the wine, I am in desperate need of another 21-Day Sugar Detox. Seriously. You have no idea. My garbage man probably thinks I am an alcoholic or I had a really big party last week.

Today was day one. My apologies for not being able to clean up the photos any better. I did the best I could to catch the photos with my phone before I forgot.

Here's how I prepared and what I ate today. Yesterday, I hard-boiled a dozen eggs. I made my Superhero Sauce, or marinara sauce, cooked up a spaghetti squash, some hot Italian sausage, and a package of bacon.

Breakfast this morning was two eggs, bacon, spinach cooked with some bacon, and some of my homemade sauerkraut. I had a mug of bone broth to go with breakfast.

Lunch was spaghetti squash topped with some hot Italian sausage and marinara sauce.

Dinner was Chicken Cacciatore made with leftover marinara sauce. I have a late afternoon meeting tomorrow so I don't know if I will be able to get home with time to cook a meal so I made extra as I wanted to be sure to have lunches covered for a few extra days.

Tonight I made some of the vanilla meltaways from the book so I will have a little something extra for a snack if I need it throughout the week.
