Kohlrabi Slaw
I'm on a mission to explore vegetables I've never really tried or enjoyed before. Today my challenge was kohlrabi. My Kohlrabi Slaw is a unique twist on the classic picnic favorite. Combine simple, yet refreshing, flavors that hit all the right tasting notes. It's sweet. It's sour. It's savory and a little nutty, too. Kind of like me. I think you'll like it.
My inspiration came from a recipe by Martha Stewart. I decided that it needed a little something extra to jazz it up a bit. The lemon zest and juice give it a little burst of color and a punch of flavor. The pistachios add crunch and a bit of a savory bite. I was pleasantly surprised by how light and refreshing it was.
Ingredients
1 bulb of kohlrabi, peeled and cut into matchsticks
1 apple, peeled and cut into matchsticks
Zest and juice of 1 lemon
Salt and pepper
Chopped roasted and salted pistachios
Directions
Toss the kohlrabi and the apple together with the lemon zest, lemon, salt and pepper. Garnish with pistachios.
