Hard-boiled Eggs
As I've mentioned in my introduction, my daughter is a vegetarian. I often worry that she doesn't get enough protein in her diet. She will eat some fish and on occasion, eggs, if they aren't overdone. One egg contains 6 grams of protein and 10 percent of your daily intake of vitamin B12, among other nutrients so they can be a great source of protein, if I can get her to eat them. Recently, I decided to make some hardboiled eggs to give her some easy protein to eat throughout the week. Plus, it is nice to have one with me as a quick snack while I am at work.
In the past, my hard-boiled egg attempts have not been too successful. In a word, they sucked. The peel wouldn't peel. The eggs would be overdone. It was mega frustrating so I decided to look for a different method this time. Nom Nom Paleo has a method in her cookbook and on her blog that I decided to try, and it worked great! The eggs peeled easily and the yolks were cooked perfectly, not overdone at all, as you can see by the photo.
One thing I will try differently next time is to not remove the eggs from the ice water all at once. I will take them out and peel them one by one. I took them all out of the ice water and then peeled each one. By the time I got to the last one, it was not as cold as the others and didn't peel as well and the first few did. I think if I leave the eggs in the water, the last few will peel as easily as the first few did. It's worth a try anyway. Either way, my results this time were lightyears better than my previous methods so this method is definitely a keeper.
